  • 2 tbsp olive oil or butter
  • 2 large leeks, sliced cleaned well
  • 3 cloves garlic minced
  • 30 oz butter beans drained and rinsed
  • 1.25 cups vegetable broth
  • 0.5 tsp smoked paprika
  • 0.5 tsp thyme dried
  • salt and pepper to taste
  • 1 tbsp lemon juice or white wine vinegar
  • 0.25 cup parsley optional, chopped
  • red pepper flakes optional

Method
 

  1. Slice and clean leeks thoroughly to remove any trapped dirt.
  2. Heat olive oil or butter in a skillet over medium heat.
  3. Add leeks and sauté 6–8 minutes until softened.
  4. Stir in garlic and cook 1–2 minutes.
  5. Add smoked paprika, thyme, salt, and pepper; stir to combine.
  6. Add butter beans and mix gently into the leeks.
  7. Pour in vegetable broth and bring to a gentle simmer.
  8. Simmer 12–15 minutes until flavors blend and liquid slightly thickens.
  9. Stir in lemon juice or vinegar to brighten the dish.
  10. Taste and adjust seasoning, then stir in parsley if desired.
  11. Serve warm with crusty bread or as a hearty main dish.

Notes

For a creamier result, mash a few beans into the broth before serving.
