Ingredients
  

Crust & Crumble
  • 2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 0.75 cup brown sugar
  • 0.25 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup unsalted butter cold, cubed
Cream Cheese Layer
  • 8 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
Fig Filling
  • 1 cup fig preserves
  • 0.5 cup fresh figs chopped
  • 1 tbsp lemon juice

Equipment

  • Mixing bowls
  • Baking pan

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. Mix dry ingredients and cut in butter until crumbly.
  3. Press crust into pan and bake until lightly golden.
  4. Beat cream cheese, sugar, egg, and vanilla until smooth.
  5. Spread cream cheese mixture over crust.
  6. Top with fig filling, then crumble topping.
  7. Bake until golden and set. Cool completely before slicing.

Notes

Chill fully before cutting for clean layers.
