Ingredients
  

Crust
  • 2 cups gingerbread cookie crumbs
  • 0.5 cup unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp molasses
  • 1 tsp ground ginger
  • 1 cup heavy cream whipped

Method
 

  1. Mix gingerbread crumbs with melted butter.
  2. Press crust mixture into jars.
  3. Beat cream cheese until smooth.
  4. Add sugar, vanilla, molasses, and spices.
  5. Fold in whipped cream.
  6. Layer cheesecake over crust.
  7. Chill for at least 2 hours before serving.
