Ingredients
  

Cookie Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tbsp espresso powder
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and espresso powder.
  3. In another bowl, cream butter and both sugars until light and fluffy. Add egg and vanilla extract and mix well.
  4. Gradually mix in dry ingredients until dough forms.
  5. Fold in chocolate chips.
  6. Drop dough onto baking sheets using a scoop, spacing 2 inches apart.
  7. Bake 10–12 minutes until edges are set and centers are soft. Cool completely on wire racks.

Notes

Chill dough for 1 hour for thicker, chewier cookies.
