Ingredients
  

Mocktail Base
  • 0.5 cup elderflower cordial
  • 0.25 cup pear juice or white grape juice
  • 2 tbsp fresh lemon juice
  • 1-2 tbsp honey or maple syrup to taste
  • 1 cup sparkling water chilled
Garnish
  • 2 sprigs fresh rosemary
  • 2 slices pear or lemon peel
  • 1 cup ice cubes

Equipment

  • Cocktail shaker or mixing glass
  • Measuring cups
  • Strainer
  • Serving glasses

Method
 

  1. Fill a cocktail shaker or mixing glass halfway with ice.
  2. Add elderflower cordial, pear juice, lemon juice, and honey or maple syrup.
  3. Stir gently for 15–20 seconds until well chilled.
  4. Strain into serving glasses filled with fresh ice.
  5. Top with sparkling water and stir lightly.
  6. Garnish with rosemary and pear slice or lemon peel.

Notes

Adjust sweetness depending on the elderflower cordial used.
