Ingredients
  

Cupcakes
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter softened
  • 2 eggs large
  • 1.5 tsp baking powder
  • 0.25 tsp salt
  • 1 tsp vanilla extract
  • 0.5 cup milk
Frosting
  • 1 cup unsalted butter softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp heavy cream
Santa Hat Topping
  • fresh strawberries hulled and dried
  • extra frosting for pom poms

Equipment

  • Mixing bowls

Method
 

  1. Preheat oven to 350°F (175°C). Line a muffin tin with 12 cupcake liners.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Cream butter and sugar until light and fluffy. Add eggs and vanilla extract.
  4. Mix in dry ingredients alternately with milk until smooth.
  5. Divide batter among cupcake liners and bake 18–20 minutes or until set.
  6. Cool cupcakes completely on a wire rack.
  7. Beat butter with powdered sugar and vanilla. Add cream to reach desired frosting consistency.
  8. Frost cupcakes, place a strawberry upside down, and add a frosting dot on top.

Notes

Ensure strawberries are fully dry before placing on frosting.
