  • 2 oz cream cheese full-fat, softened
  • 1 tbsp powdered erythritol or monk fruit
  • 0.5 tsp vanilla extract
  • 1 egg small
  • 1 tbsp heavy cream

Method
 

  1. Add softened cream cheese to a microwave-safe mug and stir until smooth.
  2. Mix in powdered sweetener, vanilla extract, and heavy cream.
  3. Add egg and stir thoroughly until completely smooth.
  4. Microwave on medium power for 45 seconds.
  5. Let rest 30 seconds, then microwave another 15–30 seconds until just set.
  6. Cool briefly, add toppings if desired, and serve.

Notes

Do not overcook; cheesecake should be slightly jiggly in the center.
