Ingredients
  

Salad
  • 1 large English cucumber chopped
  • 3 medium tomatoes cut into chunks
  • 0.5 red onion thinly sliced
  • 0.5 cup Kalamata olives
  • 0.75 cup feta cheese cubed or crumbled
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice or red wine vinegar
  • 1 tsp dried oregano
  • salt to taste
  • black pepper to taste

Method
 

  1. Chop cucumber and tomatoes into large bite-sized pieces.
  2. Thinly slice red onion and add to a large bowl with vegetables.
  3. Add olives and gently toss ingredients together.
  4. Drizzle olive oil and lemon juice over the salad.
  5. Season with oregano, salt, and black pepper.
  6. Top with feta cheese just before serving.

Notes

For best flavor, use high-quality olive oil and ripe seasonal vegetables.
