Ingredients
  

Roasted Tomatoes
  • 2 cups cherry tomatoes
  • 2 tbsp olive oil
  • 3 cloves garlic minced
Gnocchi & Sauce
  • 1 lb potato gnocchi
  • 0.75 cup heavy cream
  • 0.5 cup Parmesan cheese grated

Equipment

  • Baking sheet
  • Large pot
  • Skillet
  • Slotted spoon

Method
 

  1. Roast tomatoes at 400°F for 20-25 minutes.
  2. Boil gnocchi until they float.
  3. Combine roasted tomatoes with cream in skillet.
  4. Add gnocchi and Parmesan, toss until coated.
  5. Garnish with basil and serve warm.

Notes

For crispier gnocchi, pan-sear instead of boiling.
