- Heat olive oil in a skillet over medium heat. Sauté onions, bell peppers, and garlic until softened.
- Add ground chicken and cook until no longer pink.
- Stir in tomato sauce, tomato paste, Cajun seasoning, smoked paprika, salt, pepper, and brown sugar.
- Simmer 8–10 minutes until thickened.
- Toast hamburger buns.
- Spoon chicken mixture onto buns and garnish with parsley or pickles.
- Serve immediately with sides of choice.
