Ingredients
  

Burrito Filling
  • 1 lb ground beef 80/20 preferred
  • 1 tbsp olive oil
  • 1 cup yellow onion chopped
  • 2 cloves garlic minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp paprika
  • 0.75 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp tomato paste or salsa
Assembly
  • 6 large flour tortillas
  • 1.5 cups shredded cheese cheddar or Mexican blend

Equipment

  • Large skillet
  • Wooden spoon
  • Cutting board

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook until softened and translucent.
  3. Stir in minced garlic and cook until fragrant, about 30 seconds.
  4. Add ground beef and cook, breaking it up, until browned.
  5. Drain excess grease if needed.
  6. Stir in chili powder, cumin, paprika, salt, and black pepper.
  7. Add tomato paste or salsa and simmer for 3–5 minutes.
  8. Warm tortillas until soft and flexible.
  9. Fill tortillas with beef mixture and shredded cheese.
  10. Fold sides and roll tightly into burritos. Serve warm.

Notes

Burritos can be toasted in a skillet for extra crispness or frozen for later meals.
