Method
- Preheat oven to 400°F (200°C). Lightly oil a baking dish.
- Place cod fillets in the baking dish, spacing evenly.
- Scatter cherry tomatoes and smashed garlic around the fish.
- Drizzle olive oil over the cod and tomatoes. Season with salt and black pepper.
- Add thyme sprigs on and around the fish.
- Bake for 13–15 minutes until tomatoes burst and cod flakes easily.
- Remove from oven and squeeze fresh lemon juice over the dish.
- Serve immediately, spooning burst tomatoes and juices over the cod.
Notes
Best served fresh. Adjust seasoning and herbs to taste.
