Main Ingredients
  • 4 cod fillets about 6 oz each
  • 2 cups cherry tomatoes
  • 3 tbsp olive oil extra virgin
  • 3 cloves garlic smashed
  • 6 sprigs fresh thyme
  • 1 lemon juiced
  • 0.75 tsp salt or to taste
  • 0.5 tsp black pepper freshly ground
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Preheat oven to 400°F (200°C). Lightly oil a baking dish.
  2. Place cod fillets in the baking dish, spacing evenly.
  3. Scatter cherry tomatoes and smashed garlic around the fish.
  4. Drizzle olive oil over the cod and tomatoes. Season with salt and black pepper.
  5. Add thyme sprigs on and around the fish.
  6. Bake for 13–15 minutes until tomatoes burst and cod flakes easily.
  7. Remove from oven and squeeze fresh lemon juice over the dish.
  8. Serve immediately, spooning burst tomatoes and juices over the cod.

Notes

Best served fresh. Adjust seasoning and herbs to taste.
