Ingredients
  

  • 3 lb pork loin not tenderloin
  • 2 tbsp olive oil
  • 1 onion sliced
  • 4 cloves garlic smashed
  • 1 cup chicken broth
  • 2 tbsp Dijon mustard
  • 1 tbsp soy sauce or Worcestershire
  • 1 tsp thyme fresh or dried
  • 1 tsp rosemary chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 325°F (165°C).
  2. Season pork loin with salt, pepper, and paprika.
  3. Sear pork in hot Dutch oven with olive oil until browned on all sides.
  4. Remove pork and sauté onion and garlic.
  5. Deglaze with broth and stir in mustard, soy sauce, and herbs.
  6. Return pork to pot, cover, and roast until internal temperature reaches 145°F.
  7. Rest before slicing and serve with pan juices.
