Main Ingredients
  • 4 cups Fruity Pebbles cereal
  • 3 cups mini marshmallows
  • 3 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 0.5 cup extra Fruity Pebbles for coating
  • 0.5 cup mini marshmallows for center filling (optional)
  • 0.5 cup white chocolate melted, optional drizzle

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Line a baking sheet with parchment paper and lightly grease.
  2. Melt butter over low heat and add marshmallows, stirring until smooth.
  3. Remove from heat, stir in vanilla extract.
  4. Add Fruity Pebbles and mix until fully coated.
  5. Press mixture into rectangle and roll tightly into log shape.
  6. Coat outside with extra cereal.
  7. Chill briefly, then slice into rounds.
  8. Drizzle with melted white chocolate if desired.

Notes

Work quickly before mixture sets. Grease hands and knife for easier handling.
