Ingredients
  

Cookie Cups
  • 2 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
Filling
  • 8 oz mascarpone cheese
  • 0.5 cup heavy cream
  • 0.5 cup powdered sugar
  • 2 tbsp strong brewed coffee
  • for dusting cocoa powder

Equipment

  • Mini muffin pan
  • Mixing bowls
  • Whisk or hand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and line mini muffin pan with liners.
  2. Whisk together flour, baking soda, and salt.
  3. Cream butter and sugars until light and fluffy, then add egg and vanilla.
  4. Fold in dry ingredients until soft dough forms.
  5. Press dough into muffin cups to form shells and bake 12–15 minutes until golden.
  6. Cool completely, then fill with mascarpone, heavy cream, powdered sugar, and coffee mixture.
  7. Dust with cocoa powder and chill before serving.

Assemble filling the same day for best texture and flavor.
