Ingredients
  

Salad
  • 2 large cucumbers sliced
  • 2 ripe avocados cubed
  • 2 tbsp lemon juice fresh
  • 2 tbsp olive oil extra virgin
  • 1 clove garlic minced, optional
  • 2 tbsp fresh herbs chopped
  • salt to taste
  • black pepper to taste

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Slice cucumbers and place them in a large mixing bowl.
  2. Cube the avocados and add them to the bowl.
  3. Whisk lemon juice, olive oil, garlic, salt, and pepper in a small bowl.
  4. Pour dressing over the salad ingredients.
  5. Gently toss to combine without mashing the avocado.
  6. Add fresh herbs, adjust seasoning, and serve immediately.

Notes

Best served fresh. Add extra lemon juice if preparing slightly ahead of time.
