Ingredients
  

Cookie Batter
  • 3 cups shredded green cabbage
  • 2 cups shredded purple cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 2 cups cooked chicken shredded or diced
  • 3 green onions sliced
  • 0.5 cup cilantro chopped
  • 0.33 cup roasted peanuts chopped
  • 1 cucumber sliced
Filling
  • 0.5 cup peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp lime juice
  • 2 tbsp honey
  • 2 tsp sesame oil
  • 1 tsp ginger grated
  • 1 clove garlic minced

Equipment

Method
 

  1. Prep all vegetables and place them into a large salad bowl.
  2. Add cooked chicken to the bowl.
  3. In a separate bowl, whisk peanut butter, soy sauce, rice vinegar, lime juice, honey, sesame oil, ginger, and garlic. Add water until smooth.
  4. Pour dressing over the salad and toss to coat.
  5. Top with chopped peanuts, cilantro, and sesame seeds before serving.

Notes

For meal prep, store the dressing separately until serving.
