Crockpot Sweet Potatoes with Marshmallows

Ingredients
  

Cookie Batter
  • 4-5 large sweet potatoes peeled and chopped
  • 0.5 cup brown sugar
  • 4 tbsp unsalted butter melted
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 pinch salt
  • 0.25 cup water or orange juice
Filling
  • 2-3 cups mini marshmallows

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Peel and chop sweet potatoes into evenly sized chunks.
  2. Add sweet potatoes to the crockpot with butter, brown sugar, cinnamon, vanilla, nutmeg, and salt. Toss to coat.
  3. Add 1/4 cup water or orange juice. Cover and cook on HIGH for 3–4 hours or LOW for 6–7 hours.
  4. Mash sweet potatoes lightly or leave chunky if preferred.
  5. Top with marshmallows and cook on HIGH for 10–15 minutes until melted.
  6. Serve warm straight from the crockpot.

Notes

For a toasted top, transfer to a casserole dish and broil for 1–2 minutes.
