Crock Pot White Chicken Chili with Cream Cheese

Ingredients
  

Chili Base
  • 2 lbs boneless skinless chicken breasts
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 30 oz white beans drained and rinsed
  • 4 oz green chilies
  • 1 cup corn
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 4 cups chicken broth
Creamy Finish
  • 8 oz cream cheese cubed
  • 1 lime juiced
  • cilantro for garnish

Method
 

  1. Place chicken breasts into the bottom of the slow cooker.
  2. Add onion, garlic, beans, green chilies, corn, and all spices.
  3. Pour chicken broth over the ingredients.
  4. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Remove chicken, shred, and return to the slow cooker.
  6. Add cream cheese and stir until fully melted and incorporated.
  7. Stir in lime juice and adjust seasoning to taste.
  8. Serve hot with cilantro and toppings as desired.

Notes

For extra heat, add jalapeño or cayenne. For thicker texture, mash some beans before adding.
