Method
- Place chicken breasts into the bottom of the slow cooker.
- Add onion, garlic, beans, green chilies, corn, and all spices.
- Pour chicken broth over the ingredients.
- Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Remove chicken, shred, and return to the slow cooker.
- Add cream cheese and stir until fully melted and incorporated.
- Stir in lime juice and adjust seasoning to taste.
- Serve hot with cilantro and toppings as desired.
Notes
For extra heat, add jalapeño or cayenne. For thicker texture, mash some beans before adding.
