Ingredients
  

  • 1 lb Italian sausage casings removed
  • 1 tbsp olive oil
  • 1 onion diced
  • 4 cloves garlic minced
  • 4 cups chicken broth
  • 3 cups potatoes diced
  • 1 tsp Italian seasoning
  • 0.5 tsp red pepper flakes optional
  • 1 cup heavy cream
  • 2 cups spinach chopped
  • 0.5 cup Parmesan cheese grated

  • Crock-Pot or slow cooker
  • Skillet
  • Cutting board

Method
 

  1. Brown sausage in a skillet with olive oil. Add onion and garlic and cook until fragrant.
  2. Transfer sausage mixture to Crock-Pot.
  3. Add broth, potatoes, seasoning, salt, and pepper.
  4. Cook on LOW 6–7 hours or HIGH 3–4 hours until potatoes are tender.
  5. Stir in cream, spinach, and Parmesan. Cook 20 minutes more.

Notes

Adjust thickness with extra broth if desired.
