Ingredients
  

Soup Base
  • 1 lb Italian sausage mild or hot
  • 1 yellow onion diced
  • 3-4 cloves garlic minced
  • 4 cups chicken broth low sodium
  • 1 lb baby potatoes quartered
  • 1 tsp Italian seasoning
  • 0.5 tsp smoked paprika optional
  • 0.25 tsp red pepper flakes optional
  • 2-3 cups spinach or kale fresh
  • 1 cup heavy cream

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Brown sausage in a skillet until cooked through. Drain excess grease.
  2. Add sausage, onion, garlic, potatoes, broth, and seasonings to the Crock-Pot.
  3. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  4. Stir in heavy cream and spinach or kale. Cook 10–15 minutes until greens wilt.
  5. Season to taste and serve hot with Parmesan cheese.

Notes

Add crispy bacon at the end for restaurant-style flavor.
