Ingredients
  

Soup Base
  • 2 lbs chicken breasts boneless, skinless
  • 1 onion diced
  • 3 cloves garlic minced
  • 14.5 oz crushed tomatoes
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • 1 tsp basil dried
  • 1 tsp oregano dried
  • 1 tsp salt
  • 0.5 tsp black pepper
Creamy Add-Ins
  • 1 cup heavy cream
  • 1 cup Parmesan cheese freshly grated
  • 4 oz cream cheese softened

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Add onion, garlic, tomatoes, chicken broth, and seasonings to Crock Pot.
  2. Place chicken breasts on top and cover.
  3. Cook on LOW 6–7 hours or HIGH 3–4 hours.
  4. Remove chicken, shred, and return to pot.
  5. Stir in cream, parmesan, and cream cheese until melted.
  6. Cook an additional 20–30 minutes until creamy.
  7. Serve hot with garnishes.

Notes

For extra richness, add mozzarella at the end.
