  • 1.5 lb boneless skinless chicken breasts or thighs
  • 1.5 cups long-grain white rice uncooked
  • 3 cups chicken broth low sodium
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup onion finely diced
  • 2 cloves garlic minced
  • 1 cup carrots finely chopped (optional)
  • 0.5 cup celery finely chopped (optional)
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme or Italian seasoning
  • 0.5 cup heavy cream or milk optional, added at end
  • fresh parsley for garnish

Equipment

  • Slow cooker
  • Mixing bowl

Method
 

  1. Lightly grease the slow cooker insert.
  2. Spread uncooked rice evenly in the bottom of the crock pot.
  3. Add onion, garlic, carrots, and celery over the rice.
  4. Place chicken on top and season with salt, pepper, paprika, and thyme.
  5. Whisk chicken broth and cream of chicken soup together and pour over contents.
  6. Cover and cook on LOW for 4–5 hours or HIGH for 2.5–3 hours.
  7. Remove chicken, shred or cube, then return to crock pot.
  8. Stir in cream if using, adjust seasoning, rest 5 minutes, and serve.

Notes

Use long-grain rice only. Avoid opening the lid during cooking to ensure proper rice texture.
