- Heat olive oil and butter in a skillet over medium-high heat.
- Add gnocchi in a single layer and cook 3–4 minutes without stirring.
- Flip and cook until all sides are golden and crispy.
- Reduce heat, add garlic and crushed red pepper; cook 30 seconds.
- Add spinach and cook until wilted.
- Season with lemon zest, salt, and pepper; remove from heat.
- Top with crumbled feta and serve warm.
Notes
Crisp gnocchi works best when not boiled first.
