A fun, gooey, golden-crisp fair-style treat made by dipping marshmallows in batter and frying them until perfectly molten inside.

Ingredients
  

Batter
  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 0.5 cup milk
  • 1 tsp vanilla extract
  • 1 pinch salt
Marshmallows
  • 12 large marshmallows
Optional Toppings
  • crushed graham crackers for coating
  • powdered sugar for dusting

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Prepare marshmallows and insert toothpicks if desired.
  2. Whisk flour, sugar, baking powder, and salt.
  3. Add milk and vanilla extract to form batter.
  4. Heat oil to 350°F (175°C).
  5. Dip each marshmallow into batter.
  6. Fry marshmallows 10–15 seconds per side until golden.
  7. Drain on paper towels.
  8. Coat with graham crackers or powdered sugar if desired.

Notes

For best results, freeze marshmallows for 20 minutes before frying.
