Ingredients
  

French Toast Base
  • 1 loaf brioche or challah bread thick sliced
  • 5 eggs large
  • 1.5 cups heavy cream
  • 0.5 cup whole milk
  • 0.5 cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tsp vanilla extract
  • 0.25 tsp salt
  • 0.5 tsp cinnamon optional
Brûlée Topping
  • 0.5 cup granulated sugar for caramelizing

Equipment

  • Mixing bowls
  • Baking dish
  • Whisk
  • Kitchen torch or broiler

Method
 

  1. Butter a baking dish and arrange bread slices evenly inside.
  2. Whisk eggs, cream, milk, sugars, vanilla, salt, and cinnamon until smooth.
  3. Pour custard over bread, pressing gently to soak.
  4. Cover and refrigerate at least 4 hours or overnight.
  5. Preheat oven to 350°F (175°C).
  6. Bake uncovered 40–45 minutes until puffed and set.
  7. Sprinkle sugar evenly on top and caramelize with torch or broiler.
  8. Serve immediately once sugar hardens.

Notes

Best served fresh for optimal caramel crunch.
