Ingredients
  

Chicken
  • 2 chicken breasts
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Sauce
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 0.75 cup parmesan cheese grated
  • 0.5 cup sun dried tomatoes chopped
  • 2 cups spinach

Equipment

  • Mixing bowls
  • Large skillet
  • Knife
  • Wooden spoon

Method
 

  1. Season chicken with salt pepper and paprika.
  2. Sear chicken in olive oil until golden and cooked through.
  3. Remove chicken and set aside.
  4. Melt butter in skillet and cook garlic.
  5. Add heavy cream and simmer gently.
  6. Stir in parmesan cheese and sun dried tomatoes.
  7. Add spinach and cook until wilted.
  8. Return chicken to skillet and simmer with sauce.

Notes

Serve with pasta rice or crusty bread.
