Ingredients
  

Soup Base & Dumplings
  • 12 dumplings chicken, pork, or vegetable
  • 1 cup coconut milk
  • 2 cups chicken or vegetable broth
  • 1 tbsp Thai red curry paste
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated
  • 1 tbsp fish sauce or soy sauce
  • 1 tbsp lime juice
Garnish
  • 2 tbsp fresh cilantro
  • 2 tbsp green onions sliced
  • 1 red chili sliced optional
  • 1 tbsp crushed peanuts optional

Equipment

Method
 

  1. Heat a small amount of oil in a large pot over medium heat and sauté garlic and ginger until fragrant.
  2. Add Thai red curry paste and cook 1–2 minutes to release flavors.
  3. Stir in coconut milk and broth, bringing to a gentle simmer.
  4. Add dumplings and cook according to instructions until fully cooked.
  5. Season with fish sauce or soy sauce and lime juice.
  6. Serve in bowls, garnished with cilantro, green onions, chili slices, and crushed peanuts.

Notes

Adjust spice with curry paste and chili slices; best served fresh.
