Method
- Season chicken with salt, pepper, paprika, and Italian herbs.
- Heat butter or oil in a skillet and sear chicken 4–5 minutes per side. Remove and set aside.
- Sauté diced onion in the same skillet until soft, then add garlic.
- Add chicken broth and scrape browned bits. Stir in heavy cream.
- Add spinach and let it wilt into the sauce.
- Return chicken to skillet and simmer until cooked through and sauce thickens.
- Adjust seasoning, garnish, and serve warm.
Notes
For extra depth, add sun-dried tomatoes or mushrooms.
