Method
- Season chicken with salt, pepper, onion powder, garlic powder, and paprika.
- Heat oil and butter in a skillet over medium-high. Sear chicken 4–6 minutes per side until golden. Remove and set aside.
- Add sliced onions to the skillet and sauté until soft and lightly caramelized, about 8–10 minutes. Add minced garlic and cook 1 minute more.
- Sprinkle flour over the onions, stirring for 30 seconds.
- Slowly pour in chicken broth, scraping up browned bits.
- Reduce heat to low and whisk in sour cream until smooth. Do not boil.
- Return chicken to skillet, coating with sauce. Simmer gently 10–12 minutes until cooked through.
- Garnish with fresh parsley and serve warm.
Notes
Keep heat low after adding sour cream to prevent curdling. Add mushrooms or thyme for variations.
