Creamy Smoked Salmon Pasta

Ingredients
  

  • 12 oz pasta fettuccine or linguine
  • 6 oz smoked salmon sliced
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 0.5 cup Parmesan cheese grated
  • 1 tbsp lemon juice fresh
  • salt and pepper to taste
  • fresh dill chopped

Equipment

  • Skillet
  • Wooden spoon

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve some pasta water and drain.
  2. Melt butter with olive oil in a skillet and sauté garlic until fragrant.
  3. Add cream and simmer gently until slightly thickened.
  4. Stir in Parmesan cheese and season with salt and pepper.
  5. Add smoked salmon and gently warm through.
  6. Toss pasta with sauce, adding pasta water if needed.
  7. Finish with lemon juice and fresh dill. Serve immediately.

Notes

Add spinach or capers for extra flavor.
