Ingredients
  

  • 12 oz pasta fettuccine or penne
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 8 oz mushrooms sliced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 3 cups fresh spinach
  • 0.75 cup Parmesan cheese grated

Equipment

  • Large pot
  • Skillet
  • Wooden spoon

Method
 

  1. Cook pasta in salted water until al dente. Reserve pasta water and drain.
  2. Sauté mushrooms in olive oil and butter until golden.
  3. Add garlic and cook briefly until fragrant.
  4. Pour in cream and simmer gently.
  5. Stir in spinach and Parmesan until smooth.
  6. Add pasta and toss to coat. Adjust consistency with pasta water.

Notes

Add protein or vegetables as desired.
