Ingredients
  

Corn
  • 3 cups corn kernels fresh, frozen, or canned
  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • 3 tbsp mayonnaise
  • 3 tbsp sour cream
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika optional
  • 0.25 cup cotija cheese crumbled
  • 2 tbsp fresh cilantro chopped
  • 0.5 tsp salt or to taste

Method
 

  1. Melt butter in a skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Stir in corn kernels and cook for 5–7 minutes until heated and lightly golden.
  4. Reduce heat and add mayonnaise, sour cream, lime juice, salt, chili powder, and smoked paprika.
  5. Stir until corn is evenly coated in the creamy sauce.
  6. Remove from heat and fold in crumbled cotija cheese.
  7. Spoon corn into serving cups.
  8. Garnish with additional cheese, chili powder, and fresh cilantro before serving.

Notes

Best served warm and freshly garnished.
