Ingredients
  

Cookie Batter
  • 1 cup feta cheese crumbled
  • 0.75 cup green olives pitted
  • 0.5 cup Greek yogurt
  • 2 tbsp olive oil extra virgin
  • 1 garlic clove raw or roasted
  • 1 tbsp lemon juice fresh
  • 1 tbsp fresh herbs dill or parsley
  • 0.25 tsp black pepper

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Add feta and yogurt to a food processor and pulse until creamy.
  2. Add olives, garlic, lemon juice, and olive oil; blend until smooth but slightly textured.
  3. Fold in fresh herbs and pulse once or twice.
  4. Taste and adjust seasonings as desired.
  5. Chill for 20–30 minutes before serving.
  6. Garnish with chopped olives and olive oil.

Notes

Use good quality feta packed in brine for best results.
