Ingredients
  

  • 12 oz pasta
  • 1 lb shrimp peeled and deveined
  • 8 oz mushrooms sliced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1.25 cups heavy cream
  • 0.75 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 0.5 tsp black pepper
  • to taste salt

Equipment

  • Large pot
  • Large skillet
  • Wooden spoon
  • Colander

Method
 

  1. Cook pasta in salted water until al dente. Reserve pasta water, then drain.
  2. Sauté shrimp in butter and olive oil until pink. Remove and set aside.
  3. Cook mushrooms in the same pan until softened.
  4. Add garlic and cook briefly until fragrant.
  5. Pour in cream, season, and simmer until slightly thickened.
  6. Stir in Parmesan until smooth.
  7. Add pasta and shrimp back to the pan and toss to coat.

Notes

Use fresh shrimp and freshly grated Parmesan for best flavor.
