Ingredients
  

Pasta
  • 400 g pasta fettuccine or penne
Sauce
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 450 g mushrooms sliced
  • 5 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 0.5 tsp salt to taste
  • 0.5 tsp black pepper
  • 0.25 tsp chili flakes optional
  • 0.5 cup pasta water reserved
  • 2 tbsp fresh parsley chopped

Equipment

  • Large pot
  • Wide skillet
  • Wooden spoon

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
  2. Heat olive oil and butter in a skillet over medium heat.
  3. Add mushrooms and cook until golden and tender.
  4. Stir in garlic and sauté briefly until fragrant.
  5. Lower heat and add cream, simmering gently.
  6. Add parmesan, salt, pepper, and chili flakes, stirring until smooth.
  7. Toss pasta with sauce, adding pasta water as needed.
  8. Garnish with parsley and serve immediately.

Notes

For best results, use freshly grated parmesan and avoid overheating the cream.
