Ingredients
  

Soup Base
  • 1 lb boneless chicken cubed
  • 3 cups potatoes peeled and diced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 3 tbsp all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 0.5 tsp dried thyme
  • 1 bay leaf

Method
 

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add onion and cook until soft. Stir in garlic.
  3. Add chicken, season, and cook until lightly browned.
  4. Sprinkle flour over mixture and stir for 1 minute.
  5. Gradually add chicken broth while stirring.
  6. Add potatoes, thyme, and bay leaf. Simmer until tender.
  7. Stir in cream and cook 5 more minutes.
  8. Adjust seasoning, remove bay leaf, and serve hot.

Notes

For best results, add cream at the end and reheat gently.
