- Heat butter and olive oil in a large pot over medium heat.
- Add onion and cook until soft. Stir in garlic.
- Add chicken, season, and cook until lightly browned.
- Sprinkle flour over mixture and stir for 1 minute.
- Gradually add chicken broth while stirring.
- Add potatoes, thyme, and bay leaf. Simmer until tender.
- Stir in cream and cook 5 more minutes.
- Adjust seasoning, remove bay leaf, and serve hot.
Notes
For best results, add cream at the end and reheat gently.
