Ingredients
  

Cookie Batter
  • 3 cups cooked chicken, shredded
  • 4 cups fresh spinach or 1 cup frozen
  • 8 oz cream cheese softened
  • 1 cup heavy cream
  • 1 cup shredded mozzarella
  • 0.5 cup shredded Parmesan
  • 1 tsp Italian seasoning
  • 0.5 tsp smoked paprika
  • salt and pepper to taste
Filling
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Heat olive oil and sauté onions until soft.
  2. Add garlic and cook 30 seconds.
  3. Add spinach and cook until wilted.
  4. Stir in cooked chicken.
  5. Add cream cheese and melt gently.
  6. Stir in heavy cream, seasoning, and half the cheeses.
  7. Transfer to baking dish and top with remaining cheese.
  8. Bake at 375°F for 20–25 minutes until bubbly and golden.

Notes

Use rotisserie chicken for faster prep.
