Ingredients
  

Casserole
  • 2 cups cooked chicken diced or shredded
  • 3 cups fresh spinach
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 4 oz cream cheese softened
  • 1 cup mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated

Method
 

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. Sauté onion in olive oil until soft. Add garlic and cook briefly.
  3. Add spinach and cook until wilted.
  4. Stir in chicken, cream, and cream cheese until smooth.
  5. Transfer mixture to casserole dish and top with cheeses.
  6. Bake for 25–30 minutes until bubbly and golden.
