Ingredients
  

Pasta Base
  • 12 oz pasta rotini or fusilli
  • 1 avocado diced
  • 1 romaine heart chopped
  • 0.5 cup Parmesan shaved
  • 1 cup croutons
Dressing
  • 0.5 cup mayo
  • 2 tbsp lemon juice
  • 1 clove garlic minced
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp Parmesan grated
  • 2 tbsp olive oil
  • salt and pepper to taste

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Cook pasta until al dente; rinse under cold water.
  2. Whisk mayo, lemon juice, garlic, Dijon, Worcestershire, Parmesan, olive oil, salt, and pepper.
  3. Combine pasta, romaine, avocado, and Parmesan in a large bowl.
  4. Pour dressing over and gently toss to combine.
  5. Add croutons and toss lightly.
  6. Serve immediately.

Notes

Add avocado just before serving for best color + texture.
