Mac and Cheese
  • 12 oz elbow macaroni
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated
  • 3 cups fresh spinach chopped
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp nutmeg optional
  • 0.5 cup breadcrumbs

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cook macaroni in salted water until al dente. Drain and set aside.
  3. Melt butter in a saucepan and sauté garlic briefly.
  4. Whisk in flour and cook 1–2 minutes.
  5. Slowly add milk and cream, whisking until thickened.
  6. Stir in cheeses until melted and smooth.
  7. Season sauce and add spinach until wilted.
  8. Combine pasta with sauce and transfer to baking dish.
  9. Top with breadcrumbs and bake 20–25 minutes until golden.

Notes

Let rest 5 minutes before serving for best texture.
