- Preheat oven to 375°F (190°C) and grease a baking dish.
- Cook macaroni in salted water until al dente. Drain and set aside.
- Melt butter in a saucepan and sauté garlic briefly.
- Whisk in flour and cook 1–2 minutes.
- Slowly add milk and cream, whisking until thickened.
- Stir in cheeses until melted and smooth.
- Season sauce and add spinach until wilted.
- Combine pasta with sauce and transfer to baking dish.
- Top with breadcrumbs and bake 20–25 minutes until golden.
