Ingredients

  • 1 block feta cheese (7–8 oz)
  • 1 cup mixed olives pitted or whole
  • 0.33 cup sun-dried tomatoes sliced
  • 2-3 cloves garlic sliced
  • 3 tbsp extra-virgin olive oil
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.25 tsp crushed red pepper flakes optional
  • 1-2 tsp lemon zest
  • fresh basil or parsley for garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Place the block of feta in a small baking dish and drizzle with olive oil.
  3. Scatter olives, sun-dried tomatoes, and sliced garlic around and over the feta.
  4. Sprinkle oregano, thyme, black pepper, and optional red pepper flakes.
  5. Bake for 20–25 minutes until soft and slightly golden.
  6. Remove from oven, top with lemon zest and fresh herbs, and serve warm with bread or crackers.

Notes

For extra color and flavor, broil for 1 minute before serving.
