Cranberry Brie Bites

Flaky puff pastry bites filled with creamy brie and sweet-tart cranberry sauce, baked until golden and perfect for entertaining.

Ingredients
  

Pastry Base
  • 1 sheet puff pastry thawed
  • 1 tbsp all-purpose flour for dusting
Filling
  • 8 oz brie cheese cut into cubes
  • 0.75 cup cranberry sauce thick
  • 2 tbsp unsalted butter melted
  • 2 tbsp chopped pecans optional
  • 1 tsp fresh thyme for garnish

Equipment

  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin.
  2. Roll out puff pastry on a lightly floured surface and cut into 24 equal squares.
  3. Press each puff pastry square gently into the muffin tin to form a cup.
  4. Place one cube of brie cheese into each pastry cup.
  5. Top each with about 1 teaspoon of cranberry sauce.
  6. Brush exposed pastry edges with melted butter and sprinkle with pecans if using.
  7. Bake for 13–15 minutes, or until pastry is puffed and golden and brie is melted.
  8. Cool slightly, garnish with fresh thyme, and serve warm.

Notes

Use thick cranberry sauce to prevent overflow. These bites can be assembled ahead and baked just before serving.
