Method
- Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin.
- Roll out puff pastry on a lightly floured surface and cut into 24 equal squares.
- Press each puff pastry square gently into the muffin tin to form a cup.
- Place one cube of brie cheese into each pastry cup.
- Top each with about 1 teaspoon of cranberry sauce.
- Brush exposed pastry edges with melted butter and sprinkle with pecans if using.
- Bake for 13–15 minutes, or until pastry is puffed and golden and brie is melted.
- Cool slightly, garnish with fresh thyme, and serve warm.
Notes
Use thick cranberry sauce to prevent overflow. These bites can be assembled ahead and baked just before serving.
