Ingredients
  

Roast Beef
  • 3-4 lb beef roast chuck or top round
  • 2 cups fresh cranberries
  • 0.5 cup balsamic vinegar
  • 0.25 cup honey
  • 3 cloves garlic minced
  • 1 tbsp olive oil
  • 1 cup beef broth
  • 2 sprigs fresh rosemary
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

  1. Preheat oven to 325°F (165°C). Season beef generously with salt and pepper.
  2. Sear beef in olive oil in a roasting pan until browned on all sides.
  3. Add garlic, cranberries, balsamic vinegar, honey, broth, and rosemary.
  4. Return beef to pan, spoon sauce over top, cover, and roast 2½–3 hours.
  5. Remove beef and rest. Simmer sauce until thickened.
  6. Slice beef against the grain and serve with cranberry balsamic sauce.

Notes

Adjust sweetness and acidity to taste; leftovers reheat beautifully.
