Method
- Preheat oven to 325°F (165°C). Season beef generously with salt and pepper.
- Sear beef in olive oil in a roasting pan until browned on all sides.
- Add garlic, cranberries, balsamic vinegar, honey, broth, and rosemary.
- Return beef to pan, spoon sauce over top, cover, and roast 2½–3 hours.
- Remove beef and rest. Simmer sauce until thickened.
- Slice beef against the grain and serve with cranberry balsamic sauce.
Notes
Adjust sweetness and acidity to taste; leftovers reheat beautifully.
