Ingredients
  

Crab Puff Dough
  • 1 cup water
  • 0.5 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 eggs large
Crab Filling
  • 8 oz cream cheese softened
  • 1 cup lump crab meat picked over
  • 0.5 cup shredded cheese
  • 1 tsp garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp paprika or Old Bay

Equipment

  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 375°F (190°C). Line baking sheet with parchment paper.
  2. In a saucepan, bring water and butter to a boil. Stir in flour until a smooth dough forms.
  3. Remove from heat and cool slightly. Beat in eggs one at a time until smooth and glossy.
  4. In a bowl, mix cream cheese, shredded cheese, garlic, salt, pepper, and seasoning. Fold in crab meat gently.
  5. Spoon dough onto baking sheet and add crab filling. Lightly cover with more dough if desired.
  6. Bake 22–25 minutes until puffed and golden brown.
  7. Cool slightly on wire rack and serve warm.

Notes

Serve warm with dipping sauce for best flavor.
