Method
- Preheat oven to 425°F (220°C). Pat turkey dry and season generously with salt and pepper.
- Whisk together melted butter, garlic, lemon, Dijon, herbs, and spices to form cowboy butter.
- Brush turkey with cowboy butter above and beneath the skin.
- Place turkey on a wire rack set over a baking sheet.
- Roast 70–90 minutes, basting with cowboy butter every 20 minutes.
- Check internal temperature: 165°F for breast, 175°F for thighs.
- Rest 15–20 minutes, then brush with additional cowboy butter and serve.
Notes
For extra crispy skin, refrigerate turkey uncovered overnight.
