Ingredients
  

Turkey
  • 1 whole turkey, spatchcocked 10–14 lbs
  • salt and pepper to taste
  • 2 tbsp olive oil
Cowboy Butter
  • 1 cup unsalted butter melted
  • 6 cloves garlic minced
  • 1 lemon zested and juiced
  • 2 tbsp Dijon mustard
  • 2 tbsp fresh parsley minced
  • 2 tbsp fresh chives minced
  • 1 tsp red pepper flakes
  • 1 tsp smoked paprika
  • 0.5 tsp cayenne pepper optional

Equipment

Method
 

  1. Preheat oven to 425°F (220°C). Pat turkey dry and season generously with salt and pepper.
  2. Whisk together melted butter, garlic, lemon, Dijon, herbs, and spices to form cowboy butter.
  3. Brush turkey with cowboy butter above and beneath the skin.
  4. Place turkey on a wire rack set over a baking sheet.
  5. Roast 70–90 minutes, basting with cowboy butter every 20 minutes.
  6. Check internal temperature: 165°F for breast, 175°F for thighs.
  7. Rest 15–20 minutes, then brush with additional cowboy butter and serve.

Notes

For extra crispy skin, refrigerate turkey uncovered overnight.
