Ingredients
  

Flatbread Base
  • 2 flatbreads whole wheat or multigrain
  • 1 tbsp olive oil
  • Pinch salt
Cottage Cheese Spread
  • 1 cup cottage cheese drained if needed
  • 2 tbsp grated Parmesan cheese
  • 1 clove garlic minced
  • 0.5 tsp dried oregano
  • 0.25 tsp black pepper
Toppings
  • 0.5 cup shredded mozzarella
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 0.25 cup bell peppers diced
  • fresh basil leaves for garnish
Sauce
  • 0.5 cup tomato sauce
  • 0.5 tsp dried oregano
  • 0.5 tsp garlic powder
  • Pinch salt and pepper

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Brush flatbreads with olive oil and sprinkle with salt.
  3. In a medium bowl, mix cottage cheese, Parmesan, minced garlic, oregano, and black pepper.
  4. Spread the cottage cheese mixture evenly on each flatbread.
  5. Spoon tomato sauce over the cottage cheese layer and spread evenly.
  6. Add mozzarella and other toppings of choice.
  7. Bake for 12–15 minutes until cheese is melted and flatbread edges are golden.
  8. Garnish with fresh basil leaves and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in oven for crispiness.
