Ingredients
  

Rice Base
  • 1 cup long-grain white rice rinsed
  • 1 cup coconut milk full-fat
  • 1 cup water
  • 0.5 tsp salt
  • 1 tbsp sugar optional
  • 1 tbsp coconut oil optional

Method
 

  1. Rinse rice under cold water until mostly clear.
  2. Combine rice, coconut milk, water, salt, and sugar in a saucepan.
  3. Bring to a gentle boil over medium heat.
  4. Reduce heat to low, cover, and simmer for 15 minutes.
  5. Remove from heat and let rest covered for 10 minutes.
  6. Fluff with a fork and stir in coconut oil if using.

Notes

Use full-fat coconut milk for best flavor and texture.
