Method
- Heat oil in a large pot and sauté garlic and ginger until fragrant.
- Stir in curry paste and cook for 1 minute.
- Add broth, coconut milk, soy sauce, and sugar. Simmer.
- Add carrots and mushrooms. Cook until tender.
- Mix dumpling ingredients to form soft dough.
- Drop spoonfuls into simmering soup. Cover and cook 10–12 minutes.
- Add spinach, lime juice, adjust seasoning, and serve hot.
Notes
Adjust spice level according to curry paste strength. Best served fresh.
