Ingredients
  

Broth
  • 1 tbsp vegetable oil
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk 13.5 oz
  • 1 tbsp soy sauce
  • 1 tsp brown sugar
  • 1 carrot sliced
  • 1 cup mushrooms sliced
  • 2 cups spinach
Dumplings
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup milk
  • 1 tbsp olive oil

Method
 

  1. Heat oil in a large pot and sauté garlic and ginger until fragrant.
  2. Stir in curry paste and cook for 1 minute.
  3. Add broth, coconut milk, soy sauce, and sugar. Simmer.
  4. Add carrots and mushrooms. Cook until tender.
  5. Mix dumpling ingredients to form soft dough.
  6. Drop spoonfuls into simmering soup. Cover and cook 10–12 minutes.
  7. Add spinach, lime juice, adjust seasoning, and serve hot.

Notes

Adjust spice level according to curry paste strength. Best served fresh.
