Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 0.66 cup granulated sugar
  • 1 egg yolk large
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 0.25 tsp salt
Filling
  • 0.5 cup fruit jam raspberry, strawberry, or apricot

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and sugar until light and fluffy.
  3. Mix in egg yolk and vanilla extract until smooth.
  4. Add flour and salt gradually until dough forms.
  5. Roll dough into balls and place on baking sheet.
  6. Press thumbprint into each cookie and fill with jam.
  7. Bake 12–14 minutes until edges are lightly golden.
  8. Cool on wire rack before serving.

Notes

Use thick jam to prevent spreading during baking.
